Stainless steel cookware with an aluminum core—whether in the base, sidewalls, or both—can help provide more even, longer-lasting heat.Stainless steel pans lined with acopper core can deliver improved heat conductivity since copper has a reputation for providing greater control over temperature changes.

Copper is a reactive metal which must be lined with another material such as steel or tin etc.. While copper is not ideal for high-heat cooking, this is not a huge downfall. Because it's so good at retaining and distributing heat, there is generally no need for a high flame.
