Stars twinkle because their light must pass through pockets of earth's atmosphere that vary in temperature and density and it is all very turbulent.

The twinkling of a star star is due to atmospheric refraction of starlight. The atmosphere is made of several layers and the refractive indices which keep on changing continuously due to this path of light rays from the star keeps on changing their path continuously. As a consequence the number of rays entering, they pupil of eyes goes on changing with time and the stars appears as twinkling.
