why steam is green in color​

In steaming, the advantage is that the green vegetable is not sitting in acidic water. The steam is actually rinsing the acids off and into the water in the bottom of the steamer. The volatile acids are trapped in the pot, but they condense on the lid and run down the sides of the pot into the bottom.
