Usually compounds that can liberate free H+ ions tend to be sour in taste.
Now taste is a sense for human beings and could not be stated as a standard. After all, I don't know any one who has tasted concentrated H2SO4.
So we can't say that all acids are sour, and all bases are bitter.
Also the conception of taste is a feature of the tongue and the taste receptors on the tongue can only detect the so few, and any taste other than salt, sweet and sour is taken as bitter or hot.
