Why the air holes of a gas burner have to be adjusted with when the heated vessel gets black and by the flame?

The blackening of the vessels indicate sooty flame due to incomplete combustion of the fuel .Air (oxygen )is necessary for complete combustion. The air holes of the gas burner provide air for combustion and they have to be adjusted so that a blue and non-sooty flame is produced.
