Why the competent cells prepared is yellow in color?

I could see the pellet yellowish during the centrifugation steps in preparing E.Coli DH5 alpha cells for transformation. I would like to know the reasons for the color change though we restrict the time of incubation to 1.30-2 hours as well to avoid over growth too. The colonies even stays so well after transformation and patching with no variations in its morphology.
