Egg is made from protein and when you heat proteins, sometimes the proteins become “denatured”, which is to say that the heat energy causes them to lose their special shape. Depending on the proteins in question and the temperatures involved, different things can happen, but in an egg the proteins that are denatured are no longer soluble in water, and they clump up and stick together and become a solid mass of jumbled up proteins, and the egg becomes hard.
