why the level of mercury should change at all when the bulb of thermometer is brought in contact with another object?

Metals are good conductor of heat which means they can easily absorb heat.
A liquid changes its volume relative to its temperature.
Volume of Mercury is changed when the bulb of the thermometer is in contact with another object.

Therefore Mercury rises up as the temperature increase.
