why the plaster of Paris are stored in air tight packs or non wet place dry places?

the plaster of paris should be stored in the moister proof container as it absorbs water from moisture and turns in to hard substance (gypsum)
CaSO4.1/2 H2O(plaster of paries) +1 1/2 H2O----> CaSO4.2H20

POP(plaster of paris) should be stored in tight packs because it forms gypsum when moisture is there.
CaSO4.1/2H2O + 1 1/2 H2O ----------> CaSO4.2H2O
pop is formed when gypsum is heated at 373K.
