Why the size of lemon changes when kept in water

It's the result of a phenomenon called 'refraction'.
It happens when light travels from one medium (air) into another medium (water).
The denser the medium, the thicker the lemon will appear. It means if you were to put it inside glycerine it will appear even thicker.
