Why the water remains colourless when pieces of carrots are boiled?

simple because carrot not spread colour

piece of beet root are boiled in water than it turns red due to presence of water soluble pigment anthocyanins in beet root carrots have fat soluble pigment carotene which does not dissolve in water and therefore water remain colourless......☺️☺️
