Green plants need to convert sugar into starch because starch is a form of glucose and glucose is needed for the green plants for the completion of the photosynthesis process which they make their food from.

        They also consume carbon dioxide and release oxygen which help us to breathe. The glucose which the plants produce from the starch provides them with energy which is at times stored in the plants itself for future use.
