when a balloon is blown the air is filled in it with pressure . when we pierce it all the air in it will be acting on the walls of the balloon (according to one of the law pressure). all the air tries to gush out of the balloon and hence producing a sound

In ballon air pressure and molecules get tightly packed . So when we pierce a hole there is a sudden escape of air . When the suddenly the air molecules and pressure goes fast through the hole . This creates a lot of sound .
