Both vegetables came to India in a big way only with the Portuguese, who brought it from their south American conquests.

potatoes were grown in India displacing the elephant foot yam fields. This was the mainly because of the popularity of potatoes , hence more demand. the name aloo used to refer to elephants foot yam.

Tomatoes on the other hand did not really replace  any other vegetables in India . Therefore referred to its Portuguese name, Tamate or its variations.
