It is because Unsaturated Hydrocarbon contain unsaturated Fatty acid which should be choosen for cooking... And Saturated Hydrocarbons contain saturated Fatty acid, which is harmful for health...

Unsarurated hydrocarbons containing long hydrocarbon chains have lower melthing and boiling ponits. The difference in unsaturated and saturated fat inside the human body gives rise to many health issues.

  4. Oils rich in polyunsaturated fats also contribute vitamin E to the diet, an antioxidantto help develop and maintain your body’s cells reduce bad cholesterol levels in your blood which can lower your risk of heart disease and stroke.
  5. It reduces low-density lipoprotein cholestrol in human body and reduces inflammation.
  6. It also reduce the risk of rheumatoid arthritis.
