Why vegetables cooked with deficulty on hill station?

Due to low air pressure on high altitudes

As there is increase in altitude the atmospheric pressure decreases due to which the boiling point of water decreases. Since the boiling point of water decrease, the water will boil and evaporate quickly not allowing the veggies to cook properly......
