The acetic acid is subsequently purified and diluted with water to 60–80% by volume to obtain the 'vinegar essence.' In order to produce a food-grade vinegar, this 'vinegar essence,' which is a concentrated solution of acetic acid and highly corrosive, is further diluted until it contains 4–5% w/v of acetic acid.
