When kneaded flour, in which Baker's yeast(Saccharomyces cerevisiae) is added, is kept at a warm temperature for few hours it swells up. This phenomenon is known as leavening. It is caused due to secretion of 3 enzymes by yeast namely amylase, maltase and zymase. The first to enzymes convert starch into glucose which is acted upon by zymase. Zymase causes fermentation of glucose which mainly forms carbon dioxide and ethyl alcohol. These two cause swelling or leavening of dough.
