Because it was the last class of the teacher as they were to b ruled by some other country and their school had to stop teaching that language

A order had came from Berlin that next day onwards German would be taught in the schools of Alsace and Lorraine. But french was their mother language.

So, it was the last day of M.Hamel the French teacher because from the next day German would be taught and a new teacher will come to teach. M.Hamel wrote on blackboard "Long live France" . He wrote it as big , he could write. All the village elders were sitting at the back benches as a sign of gratitude for his service.

The last lesson was called the last lesson because it was the last lesson which M.Hamel the French teacher taught in the school on his last day.
