Sir Simon was starved because he had killed his wife. He was chained by his wife's brother as retaliation as he was the murderer of their sister. He died of starving out of food and water. The food and water were kept in the room but out of the reach of him. Sir Simon has told this to Virginia. She prays that he should be released to die and rest in peace in his grave.
