because, Diethyl ether is an especially good solvent for the formation of Grignard reagents because ethers are non-acidic (aprotic). Water or alcohols would protonate and thus destroy the Grignard reagent, because the Grignard carbon is highly nucleophilic. This would form a hydrocarbon.
