And, water is called the "universal solvent" because it dissolves more substances than any other liquid. This is important to every living thing on earth.Substances that dissolve into a solvent are called solutes, and the resulting mixture is a solution. Water is an excellent solventbecause its polar water molecules form hydrogen bonds with ions and polarmolecules, allowing ionic and polar covalent compounds to disperse easily in water.

Water is called universal solvent because water is neutral and it can be mix with other solvents. And the solvent which can dissolve any thing in its solution is universal solvent.
