As the falling object hits the surface and, initially, pushes it down, it entrails air behind it. As it penetrates the surface by more than its diameter, the liquid will start to “close” behind it. Depending on how much inertia the drop has in relation to the surface tension of the liquid, then it may close completely and entrap air bubbles. However, if it does not completely close by the time the drop surface collapses, then there will be sort of tear-drop shaped air pocket beneath the surface, which is not quite closed. As gravity acts to restore the equilibrium liquid level, it forces the air out of the pocket, and any sound (e.g. caused by vibration of the surface) resonates at a frequency inversely proportional to the “submerged” air volume, so its pitch increases as the surface returns toward the horizontal. It's basically a tiny Helmholtz resonator.

A Helmholtz resonator or Helmholtz oscillator is a container of gas (usually air) with an open hole (or neck or port). A volume of air in and near the open hole vibrates because of the 'springiness' of the air inside.
