Why we do not hear the supersonic jets when they approach us but hear a sudden boom after it has passed?

you don't hear the engines that much. Modern jet engines doesn't make very much noise, and you can actually stand right next to a jet engine running with no ear protection. A childrens program on danish TV called "Big Geek" did this some years ago.
But what you DO hear is the hot exhaust air colliding with the cold surrounding air. That makes a lot of thundering noises. The only reason the "Big Geek" guys could stand as they did was because they were in a jet engine service facility, and the exhaust was sent away through a sound dampened and actively cooled tunnel.
