Why we do not use vector notation for velocity in one dimensional motion

You already stated that it's one dimensional motion, for one dimension there is only one direction so here the meaning of speed and velocity is almost similar. Because the direction of velocity is only one, it is not important to specify the velocity with vector notation. It's good without vector notation as well.
