Birds are pollinators. The seeds they eat will pop out with their stool. Hey, fertilizer! Or the hummingbirds that flit here and there among flowers... So if you got rid of all the birds... flowers and trees can't breed as easily. Which means our flowers and trees will eventually die out.

Birds eat insects. The pine beetles decimating the pine forests up north? The mosquitoes eating up everyone? Fruit flies and gnats surrounding your fruit orchard? Perhaps they can be handled with birds. Less birds = more insects. And more insects = more disease. Who wants that? Ick. Linking back to the previous thought, bees need the flowers. They can't pollinate everything on their own. While the fruit flies might be able to help, I don't know if an exploding population of insects is really what you want. Birds will also help with pests (aphids, locusts, grasshoppers). Birds can control populations of rodents (just look at the hawks). Without them, we'd be overrun with cockroaches and mice.

Birds are the reason why we have airplanes in the first place. The Wright Brothers modeled their planes after a rough bird's skeleton (wings, rudder, aerodynamics...). We study birds so that we can improve our aircraft. That new solar plane that just came out? 16 minute flight could be extended to several hours if they figured out how to do that. It'll just require intensive researching.

Lastly, birds are food. Chickens, ducks, turkey.... if there were no birds, people and carnivores wouldn't have game to hunt, food to eat... While we might be able to live without birds, other animals can't. They rely on hunting for bird eggs, the birds themselves, and might also spread the seeds birds eat elsewhere.

Lets not forget, people are simply fascinated by birds. Their singing ability, their colors, the way they dance in a sky...

A world without birds might as well not be a world at all. It's going to die.
