They are used as variables. Other English and greek alphabets are also used but in school textbooks you'll see that most of the questions use x and Y in them. We use these variables when we don't know the actual quantity of something. If I say there are x persons in a room, it means that x might be any number which we don't know, whose actual value is equal to the number of persons in a room.
