When you put egg in hydrochloric acid, there will be effervesce of a gas (CO2). Eggshell is made up of calcium carbonate(CaCO3). Therefore, there will reaction between hydrochloric acid and calcium carbonate, thus resulting in liberation of carbon (IV) oxide.

Chemical reaction between HCl and CaCO3 is shown below:

CaCO3 (s) + 2 HCl (aq) —→ CaCl2 (aq) + H2O (l) + CO2 (g)

The acid will break the eggshell, releasing egg contents into the reaction equipment (container or a beaker). The acid (HCl) will react with egg contents such proteins, leading to their denaturation.
