This is because the blood is not continually contained in blood vessels. The heart pumps it into an aorta and blood then spills from the aorta into the general body cavity. If humans had an open circulatory system, our abdominal cavity would be full of blood and the liver, stomach, and other internal organs would be immersed in it, rather than closed blood vessels delivering blood specifically to each organ.

Open circulatory systems operate under low blood pressure and flow, but are adequate for simple animals with low metabolic rates.
