Why were the breakdown of proteins into peptides and peptones ?

Some examples are trypsin, papain and pepsin. Proteases either activate water to attack the peptide bond or form an intermediate with the cleaved peptide following which hydrolysis happens. Any proteolytic enzyme capable of breaking the peptide bonds between the two amino acid in a protein can form peptides.
