They take the shape of jar because they are too many in number. If you are lucky enough to find a jar whose size is equal to the size of crystals of sugar or salt, you would see that none of them changes shape. Actually when salt or sugar is kept in a jar, their shape remains same, but they are to be noticed very carefully
