We should include them in our diet so that we can get all the vitamins and minerals. And we don't have deficiency of vitamins and minerals.

Vitamin C gets destroyed by heat working. So when food is cooked at a high temperature excess heat destroys a major part of Vitamin C. We should therefore include some fresh fruits and vegetables in our food to get the required Vitamin C.
