The gallbladder stores bile, a surfactant used to dissolve fats (and increase their surface area for digestion). Without the gallbladder, the digestive system will be unable to dissolve fats. Thus, the consumed fats will clump up and become a large lump in the intestines, making the fats nearly impossible to digest and possibly block the intestines.
