Latches in houses are made mostly of stainless steel or plastic instead of wood or aluminum as wood could easily rot and aluminum is could result in corrosion if being exposed to salt water and air.

EXPLANATION:        

Though woods don’t get rusted, it could be infested by termites and hence it is not used for latches. Similarly, aluminum results in a stain on doors when exposed to water. Hence Stainless steel is used to make latches as they are high in corrosion resistance.
