because , firstly, it is a physical change so no change is there to change the chemical composition of the sugar cube so it will stay sweet. since the molecules are in each small piece of the sugar cube, and have not changed, the broken small bits of the sugar cube would stay sweet. also what had been the big cube of sugar is only broken into smaller pieces so there is no difference in the sweetness but if we taste the whole big cube of sugar in comparison to each small bit , the small bit would taste less sweet but nonetheless, the small bit would stay sweet.
