In summer curd set faster because of the bacteria generation faster in the summertime as if in winter, it takes longer time for the curd to set because during winter the formation of bacteria takes time and it reproduces only less number of bacteria.
It is not like summer reproduction. So it takes times for curd to set. If you keep the curd in a casserole it sets faster than vessels.
