Will the mass of water change when its state changes during the transformation of liquid water into ice.

No the mass will remain the same but density increases a bit.

And as we know there is no evolution of gases or byproduct take place during the physical change. So, the whole mass of liquid water will remain constant but the volume of the water will change definitely because the density of ice is less than the water so the volume of ice will be more than water.
