Wilted lettuce leaves if kept in cold water become crisp.Give reason.

on storage lettuce's water will eventually evaporate. The pressure inside the cells deceases and the leaves shrink. The simple yet effective remedy is to immerse the lettuce leaves in plain, cold tap water. The water will then diffuse back into the cells again and make thm crispy and fresh

Wilted lettuce are in a plasmolysed condition,when they are placed in a cold water or hypotonic solution then water enters the leaves by thye process of endosmosis and the leaves becomes deplasmolysed and they become crisp..
