10. Cook the vegetables covered on a low to medium heat until they are tender to the fork.

11. Taste-test the vegetables once they are soft-cooked, then adjust the salt. Additionally, you can now add 1 teaspoon of crushed kasuri methi. Cook on a moderately high heat to cook the liquid out of the curry if you prefer a dry curry. 2 teaspoons of chopped coriander leaves should be added. If desired, add 3 tablespoons of coconut milk or cream.

With rice, roti, or naan, serve vegetable curry.
