Vegetable toasts
A 20 minutes recipe which you can make easily by mixing 2 medium size boiled potatoes, 1/4 cup finely chopped vegetables like capsicum, onion, tomatoes etc. Add 1/4 tsp red chili powder and chat masala, 2 tbsp. finely chopped green chilies and ginger and coriander leaves to the veggie mixture.
Adjust spices and salt according to your kids’ taste.
Now cut 4 square (any shape) pieces of a bread and spread the prepared mixture on both sides of the bread. Heat a nonstick pan or griddle and grease it lightly with oil. Cook both the sides, till golden brown using little oil. Serve this with ketchup
