Yogurt gives this dish from northern India a wonderful flavor and also makes the meat very tender.The yogurt and spice flavors will penetrate the chicken if you skin it as Indian cooks always do.To remove the skin, hold a chicken piece in one hand and pull hard on the loose skin with the other hand. A paper towel can be used to get a good grip.

Recipe:

1. Chicken pieces are pricked with fork and are placed in a small bowl. Ingredients like salt,chilli, yogurt, coriander leaves, ginger, and garlic are to be added and mixed well.

The marinated chicken is to be put in a bowl then is refrigerated for 6 hours or overnight.

2. The oven is preheated to 400°F. Hal of the melted butter is poured into a roasting pan. The chicken and yogurt are also poured inti the pan. It is roasted for about 20 minutes. The heat is reduced to 350°F and the cooking is continued. Butter and pan juices are frequently added to the cooking food. The roasting is continued for 30minutes.

3. The chicken is poured on a platter and the sauce is added.

Ingredient List:

● 3.5 to 4 lbs. chicken pieces, skinned

● 1 tsp. salt

● 1 green chili, finely chopped

● 1 c. (8 oz.) plain yogurt

● 1/4 c. fresh coriander leaves, chopped

● 1 tbsp. fresh ginger, chopped

● 3 or 4 cloves garlic, chopped

● 1/4c. (1/2 stick) butter or margarine, melted.

i. Milk ½ liter

ii. Semiya 1 cup

iii. Ghee 2 table spoon

iv. Dry grapes 10 gms

v. Cashews 10gms

vi. Sugar 1 cup

vii. Badam powder ½ cup

A pan has to be heated and to that ghee dry grapes and cashews should be added to it and fry it till it changes its color to golden brown and keep it aside. Now to the same pan the ghee should be added again.  To the ghee add semiya in the pan and fry till it changes it color.

Now another pan is being taken and milk is been added to it. The milk has to be boiled. After the boiling of milk, the semiya should be added. The mixture will have to be boiled. Then to that fried dry grapes, cashews, sugar and badam powder should be added.
