Step 1

To prepare this mouth-watering snack recipe, put a deep-bottomed pan over medium flame and add water in it and bring it to a boil. Meanwhile, take a chopping board and finely chop onion, capsicum, tomato and green chilli on it. Once the water begins to boil, add maggi masala noodles and peas to it and cook till the noodles and peas are soft and tender.

Next, in another pan, add butter and let it melt. Then, add chopped onion and saute till it changes color. Now, add garlic paste, chopped capsicum, tomato and green chilli to it and saute well for a couple of minutes, till the tomatoes are soft.

Step 3

Next, in the sauted vegetables, add red chilli powder, turmeric powder, garam masala powder, black pepper powder in it and saute for a minute. Now, add the boiled maggi noodles and peas to this masala and mix well and cook for 1 more minute. Once done, transfer to a serving bowl and sprinkle a pinch of chaat masala over the noodles to make it even more flavorful. Serve it hot to enjoy!

Measuring cup used ,1 cup = 250ml

  1. 2 packets Maggi Noodles (70 Gms x 2)
  2. 2 Number Maggi masala tastemaker (Available in Maggi packet itself)
  3. 2 cups water
  4. 1 medium onion finely chopped
  5. 1 medium tomato finely chopped
  6. 1/2 cup mix vegetables (capsicum,corn,carrot,peas or any other vegetable of your choice)
  7. 1 teaspoon ginger garlic paste optional
  8. 1/4 teaspoon red chilli powder
  9. 1/4 teaspoon garam masala
  10. a pinch chat masala powder
  11. a pinch salt while cooking vegetables
  12. 2 tablespoon butter or oil
  13. 1 tablespoon fresh coriander chopped

STOVE TOP POT METHOD:

  1. Heat butter or oil in a pan. Add ginger-garlic paste, onion and sauté till onions are soft.
  2. Add tomatoes, mix vegetables and Stir-fry in high flame till they are 90% cooked and they have still little crispiness left.
  3. Add water , maggi masala, red chilli powder, garam masala powder and mix well.
  4. Bring water to boil, and add maggi noodles ,close lid and cook for 2-3 minutes.Stir in between.
  5. Finally sprinkle chaat masala and switch off the flame.Garnish with chopped coriander leaves.

INSTANT POT METHOD:

  1. Press SAUTE on Instant Pot. Heat butter or oil . Add ginger-garlic paste, onion and sauté till onions are soft.
  2. Add tomatoes, mix vegetables and saute the vegetables for a minute or two.
  3. Add water , maggi masala, maggi noodles, red chilli powder, garam masala powder and mix well.Make sure to deglaze the pot.
  4. Close the lid on the pot, and turn pressure valve to SEALING position.Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 2 minutes.
  5. Once the pot beeps, do a QUICK RELEASE.
  6. Remove lid away from you, Finally sprinkle chaat masala and garnish with chopped coriander leaves.
  7. Serve Vegetable Maggi Noodles hot!

NOTES

  • You can add vegetables of your choice like broccoli ,sweet corn.
  • Adjust the spices according to your preference.
  • You can also add some cheese on top to make Mumbai Street Style Veg Masala Maggi
