Unsaturated fats are fats which have one or more double bonds in their fatty acid chains. The number of these double bonds determine the degree of unsaturation of the fatty acid, the higher the number of double bond, the higher the degree of unsaturation of the fat. Unsaturated fats are liquids at room temperature.

Saturated fat is a type of fat that is made up of fatty acid. Saturated fats are made of long single chain bonded carbon. They have no double bonds in it as they are saturated with hydrogen molecules.

Saturated fatty acid with various viscosity tends to become solid at the room temperature. This is because they have high melting point.
