At the end of the 19th century, United States underwent an economic transformation which lead to a matured industrial economy. The big businesses, large-scale agriculture, and the rise of national labor unions began to flourish. The reason for this transformation was the innovation in technological growth. Because of the large scale, agricultural growth in the United States became the world's premier food producer. 

This development made it possible for more and more people to enjoy the perks of the services which could only be availed by the wealthy ones earlier. This advancement also increased in the number of jobs that the country could offer, improving the living standard of the general public.  

In 19th century another transformation took place which was the 'food consumption' 

The modern concepts of restaurants, retail food shops, and diversified food options emerged. The concept of going home for lunch break changed totally, they would grab their meals from the work instead, as a lot of options were available there. A rise in street food emerged. The foods like pasta and olive oil which were only accessible to wealthy people were eaten weekly or on even daily basis.  

Another reason for this transformation was a high flow of immigrants in the country, they also brought their culture with themselves in the country which majorly changed the American cuisine in the 19th century.
