vernalization is the promotion of flowering in response to prolonged periods of low temperature, such as those experienced in winter.

Vernalization is the cooling of seed during germination in order to accelerate flowering when it is planted.
It is the artificial exposure of plants (or seeds) to low temperatures in order to stimulate flowering or to enhance seed production.
By satisfying the cold requirement of many temperate-zone plants, flowering can be induced to occur earlier than normal or in warm climates.
Examples are onions and wheat.
