my mother seemed to be a better cook than most, if not all, of my friends’ mothers. I don’t know that I had a favorite meal that I preferred over others. She was great with Americanized Italian food, though. She had a great spaghetti recipe that I still use (though much tweaked and improved since I was a child, using fresh herbs, spices, and mushrooms and I added Italian sausage pieces), a delicious pizza recipe that everyone looked forward to, and this amazing recipe for lasagne. The spaghetti was something she cooked often, the pizza and lasagne took a lot of work so it was more special occasion food. I no longer use her lasagne recipe (which was taken off a box of lasagne noodles, I forget which brand) and have one that is more authentic which I prefer. The pizza recipe was only special based on making her own crust and sauce. I found the sauce too salty and garlicy when I tried it as an adult and I cannot use her pizza dough recipe due to my celiac diagnosis (the recipe won’t work with gf flour), so we use Cup4Cup’s focaccia recipe for the crust and found a great sauce recipe and it works much better than any restaurant gluten-free pizza I’ve ever tried (they taste like sadness and the crust is too thin and crispy, I like a thick, chewy crust).
