Answer:

Apart from the beautiful shlokas and sayings mentioned in other answers, two shlokas from the Bhagavadgita are also chanted before eating:

In the first verse, the act of serving and eating the food is considered as a yajna, (sacrificial ceremony), and the persons involved, the instruments used, and the fire into which they are offered are all seen as Brahman (God).

ब्रह्मार्पणं ब्रह्म हविर्ब्रह्माग्नौ ब्रह्मणा हुतम् |

ब्रह्मैव तेन गन्तव्यं ब्रह्मकर्मसमाधिना || (Bhagavadgita, Chapter 4, Verse, 24)

brahmārpaṇaṁ brahma havir brahmāgnau brahmaṇā hutam |

brahmaiva tena gantavyaṁ brahma-karma-samādhinā ||

“The instruments (like spoon, ladle, cups, plates, etc.,) with which the food is served are Brahman (God); the oblation (food offered) is also Brahman; the fire into which they are offered (present in the stomach and called Vaishvanara) is also Brahman; the act of serving food is also Brahman, and the person who offers food is also Brahman. Those who see everything involved in the process of serving and eating the food as Brahman, will surely attain Brahman (easily).

अहं वैश्वानरो भूत्वा प्राणिनां देहमाश्रित: |

प्राणापानसमायुक्त: पचाम्यन्नं चतुर्विधम् || (Bhagavadgita, Chapter 15, Verse, 14)

ahaṁ vaiśhvānaro bhūtvā prāṇināṁ deham āśhritaḥ |

prāṇāpāna-samāyuktaḥ pachāmy annaṁ chatur-vidham ||

“I assume the form of vaishvanara (digestive fire in the stomach) and reside in all the living beings, and being combined with praana and apaana (incoming and outgoing air), I cause the digestion of four kind of foods.
