Polarity, cohesion, adhesion, surface tension, high specific heat, and evaporative cooling are the most important properties of water.

  • Polarity

On both ends, a water molecule is somewhat charged. This is due to the fact that oxygen has a higher electronegative charge than hydrogen.

  • Cohesion

Water molecules are held together by hydrogen bonds, as shown in the image above. Surface tension is caused by cohesion, which is why when you fill a spoon with water drop by drop, the water volume will be larger than the spoon's surface before it falls off.

  • Adhesion

Adhesion is similar to cohesion in that it occurs when hydrogen bonds in water allow water molecules to adhere to another substance.

  • Heat with a High Specific Heat

The amount of heat received or lost for 1g to change 1oC, which in the case of water is rather considerable, is referred to as specific heat. Evaporative cooling occurs when heat energy is transmitted to water molecules, and evaporating water removes a significant amount of heat energy from an organism (eg. when we sweat)

Water's other notable qualities are its universality as a solvent and its unique density. Because water, unlike any other solid-liquid, is more dense in its liquid state than in its solid state, ice floats, allowing whole ecosystems to survive beneath layers of ice floating on oceans. Its neutral pH of (7) is also an important feature.
