It is a veggie dish, I am vegetarian.

There is no fixed list of ingredients apart from some commonly found ones (potatoes, tomatoes, onions, and some common spices). You can put many other vegetables that you have available (carrots, peas, brinjal/eggplant etc.)

It is a gravy dish so goes with Bread, Chapati, Paratha and Pulav as well.

It is easily customizable. You can make it as spicy as you want.

I used to make it a lot specially when travelling for business and when I had kitchen available at my stay. You can make it once and use for dinner as well as breakfast.

Recipe:

There is no fixed recipe to make Pav Bhaji. My mom makes it different way, my wife makes it differently - and both make it very tasty. I myself have made it with 3–4 different recipes (experiments!).

I used the following recipe for the first time last month and it turned out really well. A marathi friend who tried it even commented that it was same as the Juhu beach Pav Bhaji.

I actually made two changes to it - I used some Pav Bhaji masala instead of completely depending on the basic masalas. You can use any famous brand Pav Bhaji masala (I like Everest and MDH). Second change was about using Oil instead of butter, but that’s more a personal preference. You can use Oil or Butter as you wish.

You can do some experiments to the recipe yourself. Some people boil only potatoes and peas, and fry everything else. Some others put everything in pressure cooker to boil, even onions! You can find your best recipe after a few experiments.

Only challenge with Pav Bhaji that I have faced is: the Masher. It is important to mash the veggies well to have the texture of Pav Bhaji, and masher makes it easy. So make sure you have the masher. In the absence of a masher, I have used many alternatives like a plastic cup or a set of spatulas!

Important: Pav is an important part of Pav Bhaji. A good Bhaji alone does not make a good Pav Bhaji. A good buttery Pav can do wonders. So know how to make the best Pav for your Pav Bhaji.
