The food we consume should be Broken down into small amino acids(from proteins), fatty acids , cholesterol & simple sugars (from carbohydrates), as well as vitamins, minerals!!
in short you can say that " they help in breaking down of food into nutrients so that they can be absorbed by our body"...!!!
they are produced in pancreas, small intestines & also in saliva glands & stomach!!
therefore it can be said that with digestive enzymes our digestive system will be incomplete ✌

Enzymes:- are the biological catalysts which actively take part in the process of digestion and break down the complex carbohydrates,proteins and fats into simple digestible molecules that are absorbed in the blood for various metabolic processes on basis of which the body functions normally.

In General:-

(A) Digestion of Carbohydrates:-

Carbohydrases:-
(1)Salivary glands produce Salivary Amylase
(2) Pancreas produces Pancreatic Amylase
(3) Small Intestine produce Maltase
These convert complex Polysaccharides, Oligosaccharides and Disaccharides into::--- Simple Sugar (Monosaccharides like Glucose)

(B) Digestion of Proteins::-

Proteases:-
(1) Gastric glands of stomach produce Pepsin
(2) Pancreas produces Trypsin
(3) Small Intestine produce Peptidase
These proteases::-
Break down complex protein molecules into peptides and Amino Acids which are absorbed through intestinal mucosa into blood for different body building processes.

(C) Digestion of Fats(Lipids)::---

Lipases
Pancreatic juice especially contains lipases which break down complex Lipids into simple fatty acids which will be absorbed through mucosa of small intestine into blood and taken to various body parts for different biological functions.

Hope it helps
